Lovely Lettuce Alert!
Usually when you want unique, beautiful, mega fresh produce your best best is to head on over to the local farmers market. Here is where you find the truly earthy, natural produce that just so happens to be gorgeous and is bursting with flavor. However Inspired Greens, a local Canadian company, is totally changing the game when it comes to the produce you can get at the grocery store.
Over the past while, these amazing lettuces have been popping up in stores, totally stealing the show with their vibrant colors and long luscious roots.
Being the born again hippy that I have somehow become, these caught my eye immediately. Hydroponic grown living lettuce?! It is the perfect harmony of eating clean and living green.

- Non-GMO
- All leaves are totally useable- no more sacrificing browned outer leaves to the compost!
I think it’s safe to say that I have a new go-to lettuce. Which brings me to this recipe.
Inspired Greens Lentil Salad with Sugar Free Dijon Dressing
As far as recipes go, this one will be pretty basic. As a busy mom, it is important to make things as fuss free as possible without sacrificing taste. For the salad greens, I used a mixture of the Multi Leaf Trio and the Green Batavia from Inspired Greens. For the dressing I used a quarter of an apple, however if you have applesauce on hand that is even better (use 1/4 cup). This is one of the rare times I did not have applesauce on hand, however when you are living that sugar free life you pick up some quick hacks to sweeten your food easily. I simply popped the peeled quartered apple into the microwave for 1 minute to soften it up before blending. You could also achieve this by steaming or baking the apple.
While I never thought I would see the day that I would be eagerly eating up salad and lentils, this is where I am! It just goes to show that it is never too late to reclaim your health and transform your life!

- 3 cups Inspired Greens Living Lettuce *We used Green Batavia and Multi Leaf Trio*
- 1/4 Cucumber Sliced
- 1 cup Cauliflower Florets
- 1/8 cup Red onion
- 1/2 cup Cooked green lentils
- 1/4 Apple steamed or baked until soft (Applesauce can also be used)
- 1/2 tsp Minced garlic
- 3 tbsp Apple Cider Vinegar
- 1 tbsp Dijon Mustard
- 1 tbsp Lemon Juice
- Dash of Pepper
- 2 tsp olive oil *Optional*

- Cook lentils according to the package directions and cool. Pre-cut your cucumber, cauliflower and red onion.
- Add leafy greens to a large bowl and add cucumber, cauliflower, onion and lentils.
- Steam, bake or microwave 1/4 of a peeled, cored apple until softened. If using applesauce use 1/4 cup.
- Take all ingredients for the dressing except oil (if you are using it) and blend in a blender until smooth. Transfer into a small bowl.
- If you are using oil, stir well into the dressing mixture until emulsified.
- Add dressing to your salad, toss and enjoy!
