There is a special sort of mental wtf-ery that comes with undergoing a seriously transformative healthy lifestyle change. Basically the long and short of it is that you will have these moments where you just don’t recognize yourself, your habits or your food!
Case in point: these crispy lentil and quinoa patties
I never thought I’d see the day that I would give lentils a chance. Especially not mixed with quinoa. Yet here we are! And I can tell you it’s pretty rad.

Quinoa and Lentils: A Love (and hate!) Story
Actually let’s rewind- these two ingredients (lentils and quinoa) are really great examples of a food that I wanted to like, but didn’t for the longest time. I remember trying quinoa for the first time and then throwing that business straight in the trash. Same with lentils. The first time I tried them I made a taco beef substitute, took one bite aaaanndd no.
Just stop, lentils.
Now, my first mistake was trying to eat for the tastes that I had not developed yet. I wasn’t yet at the point where I liked these things, so forcing myself to eat them was going to suck. This was going to set me up for failure, big time!

My second mistake was abandoning ship at a single bad experience. I totally eat quinoa all the time now, and lentils are on the fast track to favorites-ville, but this is because I have been experimenting with new and better ways to prepare them. Recipe Time! Quinoa and Lentil Patties
When I made this recipe, I was totally in the mood for some pub style food. I’m talking saucy, spicy, crispy and just all round flavor explosive-ness. I almost ran out and grabbed some frozen Buffalo chicken strips but boy am I glad I didn’t. These were actually crazy easy to make, because I already had some quinoa and lentils cooked up and ready to go in the fridge. So a good tip to make your life easier- have this stuff precooked! If you are going to have these on your meal plan, make sure to prep them first.
I actually had wanted to use buffalo sauce but full disclosure, I totally grabbed the wrong bottle! However they turned out so yummy that I didn’t even notice. I guess hot sauce is hot sauce!
These lentil and quinoa patties turned out to cook perfectly without oil by using some Parchment Paper. Additionally, they are totally freezer friendly and reheated nicely after frozen. I froze them with no sauce and ended up having them again in a stir fry bowl with a coconut amino* sauce.
