I’m a lazy bitch when it comes to making dinner, specifically I can’t be arsed to do boring pedestrian things like cutting up vegetables. When it gets to the end of a long hard day of momming around, I’ll come up with a million reasons why I shouldn’t be expected to do so.

For this reason, I try to prep and pre-cut veggies, and one of my favorite types of veggie to have on hand is bell peppers.

I’m going to share a list here of quick, EASY meals that you can make with your prepped bell peppers and you’ll be able to see why these are such a staple around here!

Preparation

I usually prep these by cutting them into small cubes. There are many ways that you can prep them, but I find cubes work best for a couple of reasons. First is that cubes are easy to add to practically anything (think salads etc.) so you are more likely to use them up quickly. Second is that cubes are easy to throw in the freezer to then grab handfuls later to quickly add to stews, chili etc. If you are cutting once then why bother doing more later? Cut once then sit your ass down and relax!

1. Pita Pizzas

Pita Pizzas are a favorite around here. We use pitas, tortillas or flatbreads as the base (but we always call them pita pizzas. Go figure!)

This is an easy weeknight meal that can’t go wrong. You put pizza sauce (bought or homemade) on a pita, wrap or flatbread and cover with cheese and bell peppers. We also add prepped onions and jalapenos (because spicy for the win) and the boys here add some pepperoni or capicolli. This is very easy to make with kids, so you can get the little ones to help. I find making these is a real pain if I don’t prep in advance, but if you have your containers ready then it’s a breeze to just load them up with veggies and pop them in the oven.

2. Epic Scrambles

Epic Scrambles are basically a scrabled egg/omlette dish that we started making when I was attempting to go gluten free once (spoiler alert- I failed!). To make these, you just take a few eggs, scramble in a bowl with about 2tbsp of milk and salt and pepper, then add peppers, onions, jalapenos, cheese (optional) and stir around in a pan over medium heat until cooked. We usually serve this with roasted potatoes on the side, and occasionally will add bacon.

3. Quiche

See above, but put in pie shell. TA DA!

4. Quesadillas

Quesadillas can be super easy to make, and you can have them with chicken or meatless. I often have quesadillas when I haven’t planned properly and am left wondering what to have for dinner. I make quesadillas one of two ways. The first way if I have time and am feeling fancy is that I heat up the peppers with some onion in a tiny bit of olive oil over medium heat in a pan and sprinkle with some chili spice and cumin or some taco mix. I stir it up a bit until kind of cooked (I prefer them to be crunchy) and then add to a tortilla with some jalapenos and cheese. Fold the tortilla over itself (to make a half circle) and put into a grill to melt the cheese or on a cookie sheet in the oven until cheese is melted (turn once if doing this way)

The second way (which is the lazy girl method) is to take the peppers plan and pop them in the tortilla with some cheese. sprinkle your chili powder and cumin on top (or taco mix) and put directly into the oven. Less time over the hot stove and less dishes. Score!

6. Burrito Bowls

I do plan on doing a separate post on these because they are just so amazingly good and so incredibly simple. But for now I’ll just say that you can easily make a burrito bowl with some peppers sauteed in oil with your taco mix or cumin and chili spice (as described in the quesadilla section), served with some rice and beans (here is a recipe we posted before) and lettuce, avocado, salsa, cheese etc. These can be very healthy and very filling.

Now this isn’t an exhaustive list, but as you can see there are multiple options that can be way easier than fast food if you just have some simple items prepared and ready to go!

    I am making Epic Scrambles for breakfast tomorrow! I love adding sweet peppers to everything or just eating them raw. Glad I’m not the only one!
